Ingredients
  

  • 1 pumpkin sugar or pie variety

Instructions
 

  1. Preheat oven to 375°F (190°C). Cut pumpkin in half, remove seeds.
  2. Place cut side down on a baking sheet, roast 40–50 minutes until fork tender.
  3. Scoop out flesh, blend until smooth.
  4. Store in fridge up to 1 week or freeze up to 3 months.
